Grand Marnier French Toast with Blueberry Nectar
This recipe makes amazing, rich, flavorful French Toast with loads of healthy blueberries to counter the guilt.
Serves 4
For the French Toast:

6 large eggs
1 orange, zested and juiced
1/2 cup milk
2 tablespoons sour cream
1/2 teaspoon vanilla extract
2 tablespoons Grand Marnier
8 slices day-old French bread, about 1-inch thick
4 teaspoons butter

For the Blueberry Nectar:

1/2 cup honey or maple syrup or agave nectar (or combination thereof)
1 pint blueberries
For the French Toast:
Preheat oven to 350 degrees. Add eggs, orange zest, orange juice, milk, sour cream and vanilla to blender. With motor running, add the Grand Marnier. Blend until smooth. Transfer to large bowl. Submerge 2 slices bread into egg mixture. Place non-stick pan over medium heat. Add 1 teaspoon butter. Transfer bread from egg mixture to pan. At this point add 2 more slices bread to egg mixture. Cook the bread in the pan until golden on one side. Flip. Cook until golden on the other side. Transfer to a cookie sheet. Repeat until all 8 slices have been soaked, cooked and transferred to cookie sheet. Place cookie sheet in oven. Bake until toast is hot in the middle. Serve with blueberry nectar and powdered sugar.

For the Blueberry Nectar:
Add honey or maple or agave to stainless steel pot over medium heat. Bring to a boil. Add blueberries. Return to simmer. Reduce heat to maintain a simmer. Cook 5 minutes. Turn off heat, but leave pot on stovetop to keep warm while cooking the French Toast.
