Look Out For Licorice - The Anethole Connection
Look for licorice flavored ingredients such as fennel, star-anise, the French aperitif pastis, and licorice root itself to pop up on more menus and in home kitchens. All of these ingredients have one thing in common - anethole, a naturally occurring essential oil which gives each one their licorice-like flavor. Licorice has a sentimental scent that takes most people back to a long gone Sunday matinee sucking on a black spiraled rope.
