Fennel Pollen
If you experience fennel pollen's heavenly fragrance, you'll know why it's referred to as "the spice of the angels." Blooming flowers of wild growing fennel plants are hand-picked, sun-dried, and sieved for their aromatic pollen. The intense licorice-like flavor blends well with chopped parsley and sea salt, a mix that can be used both as a seasoning and a condiment. For a real flavor kick, coat onto fish and shellfish before sautéing, serve as a sprinkle for grilled buttered corn or vegetable risottos, or sprinkle the flesh of banana squash with butter, brown sugar, and fennel pollen before roasting.
